Okay, so my gorgeous housemate and soul sister Phebe (before anyone try’s to correct me; that is how it’s MEANT to be spelled), is allergic to loads of different nuts, including cashews (highly inconsiderate considering she lives along side a slight cashew butter addict). Anyway, I developed these balls for Phebe and I to have in the fridge, to shove in our bags as easy pick me ups through hectic weeks at drama school! They’re super simple, a great source of energy and won’t kill Phebe, what more could I ask for?!

Health benefits:

Raw, and full of protein, healthy fats and whole foods- When we eat treats made from wholefoods, we set our bodies up to better regulate their own blood sugar levels, which will help stop us craving loads of sweets and less healthy foods.

Ingredients

200g medjool dates (seeds taken out!)
100g desiccated coconut
100g ground almonds
1 scoop protein powder (I recommend a sachet of misfits vanilla flavour)
4 tbs peanut butter (I love pip and nut)
2 tbs coconut oil
2 tbs cacao (optional)

Method

  1. Place the coconut, ground almonds and protein powder (plus cacoa if using) into a food processor and process until they are well incorporated.
  2. Add the rest of the ingredients and allow the processor to work its magic, once the mixture begins to all come together, you’re ready to roll!
  3. Roll into small balls and coat with coconut, more protein powder, ground nuts (optional).
  4. Store in the fridge and enjoy xxx
